Cooking Your Boneless Proper Pork Loin Roast:
Our simple recipe for roasted proper pork loin results in the most amazing crackling with melt in the mouth tender and juicy pork.
Preheat an oven with fan to 225°C add to thick bottomed roasting dish your loin and surround with carrots, halved white onions, a whole bulb of garlic and Thyme.
Roast for 30 minutes till the crackling is perfect. Lower the temperature to 170°C and roast for a further 25 minutes per kilo. for an ideal internal temperature of 63°C
Rest the pork well for at least 45 minutes under foil.
