Cooking Your Grass Fed Beef Fillet Steak:
Take a skillet and place on a medium high heat. Give it 2-3 minutes to get really hot. dry your steak and season all around with sea salt and cracked black pepper. Add a small amount of oil to the pan and add the steaks.
Cook for 3-4 minutes on either of the 2 flat sides (for a perfect rare) and then sear the steak all around. Add a small knob of butter and baste for 30 seconds.
Remove from the pan and rest for 5 minutes in a lukewarm spot.
Serve with béarnaise sauce and chips.
