Artisan whole carcass butchery is a dying art. We are trying our best to bring it back. Utilising all parts of the animal, such as the offal,  and ensuring nothing goes to waste are what we pride ourselves on. With a focus on promoting the lesser known, but by no means lesser cuts, we aim to honour the animal the way it should be. 
 Offal will surprise you, packed full of nutrients as well as flavour, it is amongst the healthiest foods on the planet.
