Many of our farmers manage their cattle in a regenerative system, using age old processes to integrate their livestock into the environment. Such methods are beneficial to the species that co-habit the ecosystem alongside them. Mob grazing, agroforestry and diverse pastures improve the health of the soil and all species living in and on it.
The cattle mimic the ancient roaming large herbivores of long ago that were so key to benefitting the soil ecosystem and we are returning to such methods today.
Key to our sustainable farming practices are our commitments to only using native breed beef cattle. Adapted through the centuries these native cattle are perfectly evolved to thrive through our harsh winters on rough pastures.
Unlike Bulkier faster growing continental breeds which require high inputs and heavy feeding, these sow growing breeds will fatten with time not inputs. This time is our secret ingredient that forms the remarkable flavour of our grass fed beef.
We at Telfit Farm rear Belted Galloway cattle which through their unique thick 2 layer coats can thrive on our hill land. Their smaller barrel shaped bodies and shorter legs do less damage to the land than larger breeds and they thrive on our farm.
Our grass fed beef cattle all have remarkable adaptation to a diet of diverse pasture and the wide range of herbs, forbes, wildflowers and grasses they thrive on also are the key to the complexity and flavour of our beef.
Nothing is more important to the ethos of our farming than the firm belief that all our livestock should be as natural as possible. Ruminant animals like our native breed cattle are adapted to thrive on these diets and grain and high energy feed sources can disrupt and damage these delicate systems. This damage impacts the health of our cattle and this translates into the beef. Grass fed beef is for example is up to 50% higher in omega 6 and many other nutrients.
Cattle have a unique virtuous relationship with the soil that no other farm animal can replace. As the cattle consume the pasture they live on the billions of bacteria present in the soil enter their gut. The gut then in return acts as an incubator for these bacteria which then are returned to the soil along with all the nutrients they need to return to the grass.
With this cycle from soil to grass to our grass fed cow the beneficial bacteria and fungi thrive and act as a gut for the plants that live in the soil, reducing the incidence of harmful parasites and bacteria. This is the key to a healthy soil ecosystem and healthy cows
Our key focus is on finding and working with some of the best farms the UK has to offer. At the heart of this is the farmer and we see their care for their livestock as critical for the quality beef they produce. Our slow grown cattle are always given the time they need to grow at their own pace and the high quality beef is testament to this.
We work with a select number of small, family run abattoirs which we know operate to the highest standards in stress management and concern for the animal. This is critical both for our ethics and for the quality of the beef. Nothing impacts greater on this quality than stress in an animal.
Our eatTelfit Grass Fed Beef is butchered with the care and attention such magnificent animals deserves. we aspire to entirely nose to tail butchery and utilise to its finest every cut a carcass presents us with.
All of our eatTelfit beef is dry aged for a minimum of 28 days for the perfect quality and tenderness of our beef.
