Our free range chicken carcasses are the key to a spectacular chicken stock. When slowly simmered away the flavour and goodness slowly infuse the stock.
The free range life of our chickens means they develop strong skeletons and deep rich flavour from their diet off pasture and the insect life around them. This creates a depth of flavour and complexity that is totally different to commercially reared.
Packed full of collagen and other vital nutrient broths made from these carcasses make a wonderful tonic for all sorts of winter ailment and are also great for all round health.

To turn your chicken carcasses into the most superb chicken broth, start by adding to a casserole dish your chicken carcasses with onion, carrots, celery, thyme, parsley, bay and black peppercorns.
Pour over the top of this cold water to cover and place on a high heat till the water comes to a boil.
Using a ladle sieve off the scum that rises to the surface and then lower the flame till the water is at a simmer.
Slowly simmer the broth away for 1 or 2 hours until the broth is well flavoured and aromatic. Pass out your chicken carcasses and the vegetables and skim any fat off the top.
You can now flavour your broth any which way you please or use for making soups or stews
All our meat is delivered frozen.
We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.
We deliver it frozen for a number of critical reasons:
- Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.
- Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.
- Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.
- Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.

We aim to pack all deliveries ordered before 12pm next day Monday - Friday. Saturday delivery is an additional £4. All deliveries ordered after 12pm Friday are packed Tuesday.
