Our traditional dry cured back bacon is the perfect blend of lean meat with a coating of sweet fat. Taken form the loin of the pig this bacon is tender and delicate and is perfect for quick cooking in a very hot pan.

                                    

Our bacon is traditionally dry cured using no nitrates or anything bad at all. Just a simple cure of sea salt and dark brown sugar. 

Most butchers add nitrates to their bacon as this preserves the meat from spoiling and more so that it keeps the bacon pink after cooking and makes the process quicker and cheaper. 

This slow process builds a deeper richer flavour in our back bacon and the sweet cure from the dark brown sugar caramelises in the pan for added depth.

We want to produce food that has the minimum amount of anything artificial possible and we think with our bacon that means none. 

Don't be surprised if in the pan your bacon doesn't stay pink, there's nothing wrong with it at all! 

That and the slightly shorter shelf life once opened (better get it eaten!) are the only sacrifice for having healthier yet still delicious bacon.

PICK YOUR SIZE

Pre heat a thick bottom cast iron pan with either a splash of vegetable oil or even better some pork lard.

Once the pan is nice and hot place your back bacon in the pan laying the slices away from you.

Turn the bacon slices every 10 seconds to ensure even cooking and so that the bacon does not curl up into one direction.

Once coloured well on the outside remove the back bacon before it gets too cooked as back bacon tends to go dry rather than crispy.

Serve in a butty of sourdough bread with plenty of butter and optional ketchup.

All our meat is delivered frozen.

We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.

We deliver it frozen for a number of critical reasons:

  • Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.

  • Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.

  • Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.

  • Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.

We aim to pack all deliveries ordered before 12pm next day Monday - Friday. Saturday delivery is an additional £4. All deliveries ordered after 12pm Friday are packed Tuesday.

Blown away by Ben‘s Bacon

What a treat. A friend very kindly transported a selection of Bens bacon from the new shop in Leyburn, across Europe to a small Greek island. Words cannot describe the nostalgic trip back in time. Ben’s bacon tastes nothing like we know it today - its full of flavour and texture, a perfectly crisped rind. Proper fat no spitting water in the pan. Utterly delicious. Looking forward to trying more of what Ben has to offer.
