Cooking Your Bone In Pork Shoulder:

Fo the perfect pulled style pork shoulder remove the shoulder from the vacuum bag the day before cooking and leave in the fridge uncovered. Rub the pork shoulder and season well with sea salt. Preheat the oven to 225°C and place your shoulder in a deep sided tray into the oven. Roast for 30 mins.

Lower the temperature to 140°Cover add a small amount of water to the bottom and foil and roast for a further 5 Hours with an additional 30 mins per kilo over 4 kilos.

Remove from the oven and rest for an hour. Pull off the crackling and strip all the meat with a fork.
