Our grass fed mutton leg is deeply characterful and rich in flavour. This leg joint, left on the bone for flavour is just as good if not better than its lamb alternative. A life grazing on the heathland of the Dales instills complex flavours into our cull yows that have finished their breeding. 

The deep herbally flavour developed from this life of grazing on the moorland is complimented by finishing these yows on the richer better pasture land below to develop a rich layer of sweet fat. 

This leg joint makes a fabulous roast and is delicious served still pink just as with lamb and needs to be well rested.

PICK YOUR SIZE

To roast a leg of mutton, take your leg out to come to room temperature at leat 1 hr before cooking and season well around the outside.

Preheat your oven to 200°C and place your leg of mutton in a roasting dish and put in the oven. Cook at this temperature for 30 minutes till a good colour has formed on the skin.

Lower the temperature to 150°C and cook for a further 25 minutes per kilo (minus the first kilo).

Remove from the oven and rest well for at least 30 minutes prior to serving.

Slow grown on lush pastures, our lambs live a natural slow life and produce wonderful quality of lamb.

Our grass fed lambs are never fed hormones or antibiotics.

Grass fed lamb also has higher levels of critical nutrient and phytonutrients beneficial to our health

All our meat is delivered frozen.

We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.

We deliver it frozen for a number of critical reasons:

  • Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.

  • Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.

  • Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.

  • Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.

We aim to pack all deliveries ordered before 12pm next day Monday - Friday. Saturday delivery is an additional £4. All deliveries ordered after 12pm Friday are packed Tuesday.
