Pork shoulder is the pigs ultimate slow roasting joint. 

The perfect amount of well dispersed fat and collagen melt when slowly cooked resulting in uniquely soft and unctuous, pull apart meat.

Here on the bone the flavour and marrow from which disperses through the meat as you slowly cook it. Crisp up the cracking and leave in a slow oven for hours to gently melt down.

When done the bones should literally just fall out and the meat will pull apart 

Also great cooked slightly faster and sliced for a wonderful Sunday roast.

For the perfect pulled style pork shoulder remove the shoulder from the vacuum bag the day before cooking and leave in the fridge uncovered. Rub the pork shoulder and season well with sea salt.

Preheat the oven to 225°C and place your shoulder in a deep sided tray into the oven.

Roast for 30 mins.

Lower the temperature to 140°Cover add a small amount of water to the bottom and foil and roast for a further 5 Hours with an additional 30 mins per kilo over 4 kilos.

Remove from the oven and rest for an hour. Pull off the crackling and strip all the meat with a fork.

All our meat is delivered frozen.

We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.

We deliver it frozen for a number of critical reasons:

  • Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.

  • Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.

  • Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.

  • Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.

We aim to pack all deliveries ordered before 12pm next day Monday - Thursday. We do not pack on Fridays due to the cost of Saturday delivery. All deliveries ordered after 12pm Friday are packed Tuesday.
