Ox cheek is a hard working muscle from a life of chewing the cud. With defined, strong muscle fibres, ox cheek requires plenty of gentle cooking to tease apart the fibres.
Intensely flavoured with rich beefiness this is one of the best slow cooking cuts there is.
When cooked for hours the cheek breaks down into wonderful melting meat that pulls apart.
It’s also very scarce as each of our grass fed native breed cattle only has two!
Full of collagen this is a cut that is packed with beneficial nutrients.

Goes Great With:
To cook braised ox cheeks, start by coating your cheeks in flour and preheating a casserole dish over a medium high heat.
Add a little oil and colour your cheeks all around before removing. Add some diced Carrots, onion and celery to the pan and sweat down before adding some tomato paste and cooking out.
Pour in some red wine and chicken stock and reduce slightly before adding a bouquet garni and your cheeks back in.
Place in a 160°C oven for 2 hrs till meltingly tender.
Serve with polenta for a wonderful italian twist.

We aim to pack all deliveries ordered before 11am next day Monday - Friday. Saturday delivery is an additional £4. All deliveries ordered after 12pm Friday are packed Tuesday.

All our meat is delivered frozen.
We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm (<5°C).
We deliver it frozen for a number of critical reasons:
- Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.
- Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.
- Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.
- Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better to farm as they do.
