Proper Pork Shoulder Chop
Pork shoulder chops are taken from the fore rib, the chop end of the shoulder. These are like the equivalent of a delmonico steak from a pig. A cut with perfect fat ration and amazing marbling, at its best shoulder chop can be packed full of flavour and juicy.
With more bite than many other cuts these chops take amazingly to the barbecue or pan as the fat melts and the fibres break down
Shoulder chops are best cooked slightly pink and rested well to soften.
PICK YOUR SIZE
Remove you shoulder chop from the fridge and season well with sea salt on both sides. Leave to come to room temperature for 1 hour.
Dry you shoulder chop well, take a thick bottomed skillet and place over a medium heat. When just hot add your chop fat side down and slowly render your chops fat adding colour all the way round. If done slowly enough this should take 5 minutes or so.
Once teh fat is rendered lay you chop down in the pan and cook slowly flipping every 30 seconds to achieve a nice even cook and deep golden colour.
Once the chop is cooked around medium (this should take 4-5 minutes), add a good knob of butter, a couple of garlic cloves, sage and some thyme. Baste your chop well on both sides for around 2 minutes and remove from the pan to rest. Cover with the butter and leave for 10 minutes. It should be perfect medium well.
Remove the bone and carve into thick slices.

We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.
We deliver it frozen for a number of critical reasons:
- Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.
- Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.
- Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.
- Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.
