Ingredients

For The Skewers

1 Ox Heart Diced
150 g Greek Yoghurt
1 tsp Sweet Paprika
½ tsp Cayenne
½ tsp Cumin
Salt and Black Pepper

For The Flatbreads

370 g Plain Flour
220 ml Warm Water
2 tbsp Olive Oil
1 tsp Caster Sugar
1 tsp Yeast
½ tsp Sea Salt

For the Butter

2 Green Chilli
100 g Coriander
3 Cloves Garlic
150 g Butter
2 Limes (Juice and Zest)
Salt and Black Pepper

Instructions

To Marinade The Skewers

Combine all the ingredients for the marinade in a bowl and season to taste
Add your ox heart and combine well before covering in clingfilm and leaving in the fridge for a minimum of 4 hours, ideally overnight

To Make The Flatbreads

Combine the yeast and the warm water in the mixer and leave to stand for 5 minutes
Add the rest of the ingredients into the bowl and mix gently till combined
Raise the speed of the mixer and knead the dough for 10 minutes until the dough is no longer sticky and is elastic
Leave to prove for 2 hours
Knock back the dough and split into nice size even portions before shaping into balls and leave for a few minutes to rest
Place a cast iron pan over a medium high heat and lightly brush with olive oil
With a rolling pin roll out the balls one by one into nice flatbread shapes before placing into the cast iron pan. Cook on one side until holes appear in the top before flipping and cooking on the other side.

To Make The Butter

Place you chilli's either over the barbecue or over the flames of a gas hob and burn all the skin of the chilli
Deseed the chilli's and combine with all the remaining ingredients except the butter in a blender and blitz well till a smooth paste
Finally add the butter and blitz gently till combined. Place in a bowl and chill

To Complete The Skewers

Take the ox heart and place the pieces one by one on skewers
Preheat your charcoal in the barbecue till white and just starting to cool
Grill the skewers over the coals ensuring a good colour all over the outside whilst cooking to just medium
Cover your skewers whilst just off the barbecue with the butter until its melted and serve with the flatbreads
