Pork Scratchings with Fennel and Coriander Seeds

500 g Proper Pigs Skin
2 tsp Yorkshire Sea Salt
2 tsp Fennel Seeds
1 tsp Coriander Seeds
½ tsp Black Pepper
½ Zest of Half a Lemon

Instructions

Toast your fennel and coriander seeds in a dry frying pan until fragrant and toasted
Add into a mortar and pestle with your salt, black pepper and lemon zest. Grind into a fine powder and set aside
Cut your pigs skin into thin strips of around 3 inches long
Preheat a pan of oil to 150°C and fry your scratchings for around 5 minutes. Lift your scratchings and reserve
Raise the temperature of your oil to 180°C and place your scratchings back in for another 3/4 minutes
Drain your scratchings onto a paper towel to soak up the oil and pour into a bowl. Toss in your seasoning and serve
