Pork Chops with Apple, Roasted Vegetables and Herbs

6 Pork Chops
1 Butternut Squash
1 Sweet Potato
2 Red Onions
2 Fennel Bulbs
4 Carrots
4 Bay Leaves
5 Sprigs Thyme
5 Sprigs Marjoram
10 Finely Cut Chives
3 Sweet Apples

Instructions

preheat oven to 220°C
Cut your butternut squash, carrots and sweet potato into 1 inch chunks and add to a roasting dish
Season these with salt and pepper. Coat lightly with olive oil and toss.
Quarter your apples, onions and Fennel bulbs and place on top of the diced vegetables with the bay leaves
drizzle oil over the apple, onions and the fennel and season lightly
Roast this for 45 minutes like this, checking regularly. Once good and coloured lower the temperature to 200°C
Place a skillet on a medium heat
Season well your pork chops with salt and add all your pork chops fat side down to the skillet slowly melting out the fat
Raise the heat to high on the skillet and in small batches quickly colour the chops on both sides, you do not need to cook them through.
add the chops on top of the vegetables, surround with the thyme and marjoram and roast for another 6/7 minutes
Allow to rest for 34/4 minutes and before topping each chop with finely cut chives
