Pork, Date and Cider Casserole

As winter closes in we’re already looking forward to hearty stews and log fires. Here is one of our favourite home recipes for a warming Pork Stew.

1 Kg Diced Pork
6 Pork and Apple Sausages
250 ml Good Chicken Stock
500 ml Good Cider
250 ml Fresh Apple Juice
12 Dates
50 ml Soy Sauce
6 Decent carrots
5 Sticks Celery
4 Cloves Garlic
3 Onions
2 Tablespoons Dijon Mustard
2 Bay Leaves
4 Sprigs Thyme

Instructions

Dice down carrots and keep in 1 pile. Also Dice Onions and Celery and keep separately
In a large deep casserole dish brown off the sausages and cook till fully done (remove and cool in fridge before slicing into rings). then brown off the diced pork ensuring pan is truly hot before adding the pork. reserve this to one side.
Add carrots over a high heat and caramelise until shiny and glazed then lower heat and add onions, celery and sweat down. Finally add the minced garlic, bay and thyme.
Add soy sauce and reduce until sticky, mix in mustard , then add the cider and bring to boil. finally add the stock and apple juice and reduce by 1/4.
Add back in the diced pork, sliced sausages and dates and cook with lid on for 1.5 hrs at 170C. I would advise checking after 1 hr and if too much liquid remove the lid to reduce.
