Cut between the ribs of the belly, these are great for braising or flash frying and finishing in the oven.
Get a great colour on the exterior in the pan for the maximum flavour and slowly finish in the oven so they melt down.
These are a super simple and convenient meal with all the wonderful flavours of slow cooked pork belly but much quicker.
We leave the bones in the slices to ensure there is good protection for the soft meat and that the flavour permeates the meat.
PICK YOUR SIZE
Preheat an oven to 170°C and place a skillet on a medium high heat. Season well with salt and pepper and add your pork belly slices skin side down to render the fat and crisp up the skin.
Once the skin is crispy and puffed, turn the belly and colour well on all sides. To the pan add some garlic, sage and butter and baste the belly well and add to the oven.
Roast in the oven for 45 minutes, basting the belly every 15 minutes
Remove from the oven and rest for 30mins.

We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.
We deliver it frozen for a number of critical reasons:
- Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.
- Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.
- Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.
- Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.

We aim to pack all deliveries ordered before 12pm next day Monday - Friday. Saturday delivery is an additional £4. All deliveries ordered after 12pm Friday are packed Tuesday.
