The pork equivalent of a rump steak this tender and relatively lean cut of pork is one for cooking hot. Flash fry and rest your chumps well.

Chump steaks can be left slightly pink in the middle which is becoming more and more popular with pork. The fat on the chump melts out in the pan permeating the meat with flavour and the meat is soft and buttery when fried.

A recipe for the perfect pork steak with a wonderful sauce goes like this.

Preheat a skillet over a medium heat. Season your steaks well on both sides with salt and pepper. Add your steaks to the pan and cook them, flipping the steaks every 30 seconds, for 5 minutes

Add good knob of butter, some sage and garlic to the pan and baste the steak well for 1 minute further then remove the steak from the pan. Leave the steak to rest on the side.

Add a good swig of cider, a splash of apple juice and reduce. Emulsify the sauce by whisking in some Dijon mustard. Finish with a drop of whipping cream and cook for a further minute. serve over the steak.

We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.

We deliver it frozen for a number of critical reasons:

  • Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.

  • Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.

  • Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.

  • Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.

We aim to pack all deliveries ordered before 12pm next day Monday - Friday. Saturday delivery is an additional £4. All deliveries ordered after 12pm Friday are packed Tuesday.
