To make our bacon we use only salt and molasses sugar and nothing else in our cures. These are slowly cured before being air dried to concentrate the flavours and firm up the bacon to make the perfect slice.
On our streaky bacon we leave the rind on which crisps up perfectly in the pan for the most fantastic bacon rasher you can imagine.
For our smoked bacon we use our house blend of applewood and cherrywood that gives our bacon a superb balance of flavours from the lighter apple to the bolder flavours of cherry.
