Pontack Sauce is an old fashioned victorian recipe made of elderberries. This superb autumn forage is stewed slowly with onions, spices and cider vinegar before being pressed and left to mature.
This fruity sauce makes a great alternative to Worcestershire Sauce and can be added to dressings, gravies or anything for a touch of sharpness and depth of flavour.
