Taken from the equivalent of a topside of a pig, our proper pork schnitzel is sliced ready to cook.

Lean and tender, this cut is best tenderised and needs cooking quickly. Done right though it is seriously delicious.  This Schnitzel cut is ideal for flash frying or breading and make a simple healthy supper.

For a classic schnitzel holstein serve with and egg, capers, brown butter and anchovies.
