The flat of the back, grass fed sirloin steak packs an absolute punch. Powerful, rich, beefy flavour slowly matured. Sirloin is the cut for crispy fat with a marbled yet lean centre.

The slight yellow fat and rich deep meat found in our Grass fed sirloins are a true sign of the quality of our slow grown native breed beef.

Bring your steak to room temperature prior to cooking.

Heat a skillet on a medium high heat until it is medium hot. Dry and season your steak well with salt and pepper on both sides.

With tongs hold your steak fat down so the fat crisps and melts out. The pan should gradually get hotter and hotter as this happens. Once the pan is very hot place one side down in the pan and cook for 3 minutes each side.

Remove from the pan and rest in a lukewarm place for 5 minutes as the juices reabsorb.

Grass Fed Beef, slow grown in natural systems on diverse pastures. Dry aged for a minimum of 28 days revealing the full flavour and tenderness of our natural beef. All butchered with care and by hand by our artisan butchers.

Our beef is all ethically sourced from small farms rearing native breed cattle, free ranging on the hills around the Yorkshire Dales. Our grass fed beef are fed on lush, natural pastures growing naturally with no hormones or fed antibiotics.

Real grass fed beef is a rich source of Omega 3 with a superior omega ratio also. Proper beef is full of nutrients, and phytonutrients critical to our health.

All our meat is delivered frozen.

We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.

We deliver it frozen for a number of critical reasons:

  • Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.

  • Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.

  • Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.

  • Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.

We aim to pack all deliveries ordered before 12pm next day Monday - Thursday. We do not pack on Fridays due to the cost of Saturday delivery. All deliveries ordered after 12pm Friday are packed Tuesday.
