Cut between the ribs of the belly these are great for braising or flash frying and finishing in the oven. Get a great colour on the exterior in the pan for the maximum flavour.

Cooking Your Proper Pork Belly Slices:

Preheat an oven to 170°C and place a skillet on a medium high heat. Season well with salt and pepper and add your pork belly slices skin side down to render the fat and crisp up the skin.

Once the skin is crispy and puffed, turn the belly and colour well on all sides. To the pan add some garlic, sage and butter and baste the belly well and add to the oven.

Roast in the oven for 45 minutes, basting the belly every 15 minutes

Remove from the oven and rest for 30mins.
