Grass Fed Beef Sirloin Roast
Our Sirloin Roast is frankly an amazing cut of beef, prepared to be presented as a show stopping Sunday lunch.
Sirloin is taken from the flat of the back. We also roll some of the belly around the roast, so that it is perfectly protected by a layer fat, covering it all the way around the beautifully marbled eye of the meat.
This ensures that your sirloin roast stays juicy and keeps its flavour locked in and has a delicious layer of crisp fat all the way round.
Our beef is dry aged for a minimum of 28 days so it dry's out concentrating the flavour and achieving perfectly tender meat.

Defrost your siloin roast either in the fridge or in the vacuum bag in water.
Remove your sirloin roast from the fridge, season well and allow to come up to room temperature for at least 2 hours. You cna also season your meat the night before and leave in the fridge for the salt to penetrate the meat.
Preheat your oven to 210°C and place your sirloin in a deep sided roasting dish. You can place it on top of a trivet of onions, carrots and celery for added flavour.
Roast for around 20 minutes at this temperature until you have achieved a deep golden colour and rendered the fat well. Then lower the temperature to 140°C and add a splash of red wine and a bunch of thyme to the roasting dish under the meat.
Cook for a further 20 minutes per kilo. Remove from the oven and rest well for at least 30 mins.
Meanwhile you can make a superb gravy by adding beef stock to your pan and reducing to a thick gravy. Pass out the vegetables and serve on beautifully carved discs of sirloin.

All our meat is delivered frozen.
We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.
We deliver it frozen for a number of critical reasons:
- Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.
- Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.
- Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.
- Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.
