Let your grass-fed silverside beef come to room temperature for 30 minutes, ensuring an even cooking process.

preheat your oven to 210°C. Place the beef in a heavy-bottomed roasting dish. Rub the beef with oil and liberally season with salt and pepper. Roast for 30 minutes to develop a golden, crisp crust.

After the curst has formed, arrange a mix of root vegetables like parsnips, turnips, and quartered red onions around the beef. Pour some good beef stock into the dish. Cover the beef loosely with aluminum foil, allowing for a balance of moist and dry heat. Reduce the oven temperature to 170°C and continue to roast for 3 hours, until the beef is fork-tender.

Let the beef rest for 30 minutes post-roasting. This step is key for a juicy, flavorful roast.

While the beef rests, prepare a rustic gravy. Skim the fat from the roasting dish and use the remaining liquid, enriched with vegetable and meat juices. Simmer with a sprig of fresh thyme, and thicken slightly with flour for a hearty gravy.

Our beef is all ethically sourced from small farms rearing native breed cattle, free ranging on the hills around the Yorkshire Dales. Our grass fed beef are fed on lush, natural pastures growing naturally with no hormones or fed antibiotics.

Real grass fed beef is a rich source of Omega 3 with a superior omega ratio also. Proper beef is full of nutrients, and phytonutrients critical to our health.

All our meat is delivered frozen.

We deliver it to you in insulated sustainable wool packaging that can keep it frozen for 72hrs. When you receive your meat please put it straight in the freezer. Even if it has defrosted it is ok to put back in the freezer as long as it is not warm.

We deliver it frozen for a number of critical reasons:

  • Natures preservative. Freezing is one of the most ancient of all methods of preservation. We firmly believe that when frozen rapidly there is no loss of quality in the meat.

  • Sustainability. By freezing our meat we can ensure there is as close to zero waste as possible. Our meat is frozen as soon as it is butchered in protective packaging that allows us to keep the meat perfectly for over a year. This is vs 10 days for fresh.

  • Seasonality. Like vegetables, meat has a season. By freezing our meat we can select our produce when it is at its very best. Fresh meat butchers cannot do this and you can taste the difference in our meat.

  • Better supporting farmers. For our farmers it is most profitable for them to get the produce off the farm as soon as it is ready. This allows us to support them better.
