Our small batch, free range woodland raised turkeys are perfect for the centrepiece of any great Christmas table! Reared totally naturally these bronze turkeys are slowly grown and allowed to engage in ancient instincts in their natural habitat.
These superb whole free range turkeys are all dry plucked and hand finished before being hung for 14 days resulting in a uniquely deep and rich flavour with fantastic tenderness. Great For:
Roasting and Slow Roasting
Remove your turkey from the fridge two hours prior to cooking to come to room temperature.
In a roasting dish (big enough to take your turkey add a mirepoix (equal parts carrots, celery and onions) and thyme with 3 cm deep of water.
preheat your oven to 210°C (with fan)
Now add the stuffing to your bird, if you are going to do one (add the weight of this to the birds weight for your cooking time). Spread softened butter on the skin of the turkey and season well with salt.
Add the turkey to the tray and place in the oven for 25 mins. Now lower the heat to 170°C, cover your tray and turkey in foil and cook for 35 mins per kilo of weight -1 kg for the first 25 mins cooking. (you must hit an internal temperature of 70°C prior to removing always trust the probe)
Rest the Turkey for 2hrs in a 65°C oven. Remove the foil. Extract all the juices and mirepoix, these will make the most amazing gravy.
heat the oven back up the 210°C and put the bird back in for 20 mins to crisp the skin up and serve.
